Tortilla Soup - Slow Cooker

2lbs boneless chicken thighs
2 cups chicken stock
1 can (14oz) fire roasted diced tomatoes with juice
1 can (15oz) whole kernel corn
2 cans (14oz) black beans
1 can (4 oz) green chiles
4 cloves of garlic, minced
1 large white onion, peeled and diced
1 green pepper
1 tsp cumin
1 tsp salt
1/2 tsp chipotle powder
shakes of black pepper

Add all ingredients to slow cooker, and cook on low for 8 hours.  Serve with a variety of garnishes, such as avocado, cilantro, sour cream, green onions, cheese, and tortilla chips.
